HOW TO:

  1. Remove duck from packaging and cook in the airfryer on non stick paper for 15-20 minutes on 200°C
  2. Prepare cucumber by halving, then scooping out the inside.
  3. Cut into thin sticks and set aside.
  4. Remove the tips and roots of the spring onion and cut into thin strips.
  5. Remove the pancakes from the packaging and steam for 7 minutes. If you don’t have a steamer, microwave for 30 seconds with a small bowl of water in the microwave,
  6. Place hoisin sauce in a serving dish and lay out the duck pancake toppings.
  7. One the duck is cooked, use forks to remove the meat from the bones and further shred the meat.
  8. Assemble the pancakes with hoisin sauce, cucumber, duck and spring onion. Garnish with coriander.
