HOW TO:
- Remove duck from packaging and cook in the airfryer on non stick paper for 15-20 minutes on 200°C
- Prepare cucumber by halving, then scooping out the inside.
- Cut into thin sticks and set aside.
- Remove the tips and roots of the spring onion and cut into thin strips.
- Remove the pancakes from the packaging and steam for 7 minutes. If you don’t have a steamer, microwave for 30 seconds with a small bowl of water in the microwave,
- Place hoisin sauce in a serving dish and lay out the duck pancake toppings.
- One the duck is cooked, use forks to remove the meat from the bones and further shred the meat.
- Assemble the pancakes with hoisin sauce, cucumber, duck and spring onion. Garnish with coriander.
