In his own words – “Simple to cook, versatile and tastes amazing!”


  • Crispy Duck
  • 200g maris piper potatoes
  • 1 small onion
  • 1 small tomato
  • 2 slices pineapple
  • 1 lime
  • Small bunch coriander
  • 6 tortillas
  • 1 tablespoon duck fat
  • Hot sauce
  • Salt & pepper


  • Place the crispy duck into the oven for 30mins @ 200c as per packet instructions. Add a little olive oil to the skin for extra crispy results.
  • Peel, wash & dice potatoes. Blanch in boiling water for 3mins to soften slightly. Once drained add to pan with a tablespoon of duck fat and cook on medium / high heat for 25 mins, stirring frequently to ensure even browning. Season with salt.
  • Heat another pan on high heat with a teaspoon of olive oil and place the 2 pieces of pineapple in the pan for 3 minutes per side, until browned and caramelised.
  • To make the salsa combine the roasted pineapple, diced onion, tomato, coriander & lime and mix to incorporate. Season with salt to taste.
  • Once duck is cooked slice and shred to your liking.
  • Warm tortillas in a pan on medium heat and top with the crispy duck, duck fat roast potatoes and roasted pineapple salsa. Add hot sauce if desired.
