WHAT YOU NEED:
- Crispy Duck
- 200g maris piper potatoes
- 1 small onion
- 1 small tomato
- 2 slices pineapple
- 1 lime
- Small bunch coriander
- 6 tortillas
- 1 tablespoon duck fat
- Hot sauce
- Salt & pepper
HOW TO:
- Place the crispy duck into the oven for 30mins @ 200c as per packet instructions. Add a little olive oil to the skin for extra crispy results.
- Peel, wash & dice potatoes. Blanch in boiling water for 3mins to soften slightly. Once drained add to pan with a tablespoon of duck fat and cook on medium / high heat for 25 mins, stirring frequently to ensure even browning. Season with salt.
- Heat another pan on high heat with a teaspoon of olive oil and place the 2 pieces of pineapple in the pan for 3 minutes per side, until browned and caramelised.
- To make the salsa combine the roasted pineapple, diced onion, tomato, coriander & lime and mix to incorporate. Season with salt to taste.
- Once duck is cooked slice and shred to your liking.
- Warm tortillas in a pan on medium heat and top with the crispy duck, duck fat roast potatoes and roasted pineapple salsa. Add hot sauce if desired.
