The following are guidelines only. Some appliances may vary. Remove all packaging before cooking.
To oven cook: Preheat the oven to 200°C/Fan 180°C/Gas Mark 6. Score the fat of the duck in as criss-cross pattern and season with salt and pepper. Set aside sachet of plum sauce for later. Place fillets fat side down on a cold dry pan and cook over a medium heat. As the pan heats up the fat will start to render from the fillets. Cook until fat on the fillet is golden in colour, approximately 6 minutes. Turn fillets over, continue to cook for 2-3 minutes (be sure to save the fat from your pan for wonderful roast potatoes and vegetables). Place fillets on a roasting tray and cook in the centre of the oven for 15-20 minutes. Remove from the oven, drizzle the sauce over the fillets and cook for a further 5 minutes. Allow fillets to rest for 5 minutes before consumption.
Ensure food is piping hot cooked throughout and no pink colour remains before serving. Do not reheat. Not suitable for microwave cooking.
Keep refrigerated -2°C to 4°C. Once opened, use within 24 hours and by the use by date. Suitable for home freezing. Freeze on the day of purchase and use within 1 month. Defrost thoroughly in refrigerator before use. Do not defrost in microwave. Use within 24 hours of defrosting. Once defrosted do not refreeze.
